Italian Home Cooking Summer Course (n1) – chigusa

上段「Pasta e mollica」「Puttanesca」 下段「Penne quattro formaggi」「Gnocchi Ragu di polpo」
モーリカはパン粉のパスタ、シチリアの郷土料理でチーズが買えない貧しい人でも食べられるパスタだそうです。
プッタネスカは日本でも一般的ですね。娼婦風といわれるのは忙しい娼婦でもすぐに作れるパスタということからついたとか。

味の決め手になるacciuga(アンチョビ)日本ではオイル漬けやペーストが一般的ですが、こちらでは塩漬けのもの塩抜きして使います。はらわたと中骨をとって水に漬ける、この作業やニンニクの皮むき、野菜のみじん切りなどはみんなで手分けして行います。

At Accademia Riaci, we are recruiting Course Reporters from our students. The students who are chosen to become Course Reporters are given 10 % of the tuition as their scholarship fee.
The Reporters who have submitted excellent reports will have his or her profile posted on our school website for the next 5 years as an alumnae and will be able to connect with their business chancesafter their graduation.
